You know what's amazing? Pancakes 🥞

What's less amazing? Standing over the stove cooking them for 30 minutes

Enter: Sheet Pan Pancakes

Pumpkin Sheet Pan Pancakes to be precise, since Pumpkin is the most delicious way to get in that Vitamin A for baby's eyes, organs, and immune system ✔️

HOT TIP Sheet Pan Pancakes freeze beautifully, and are the BEST thing to keep in the freezer should you have a *pangry* (hangry, but for pregnancy) moment and need a fast snack.


The girls and I have been these for a couple days now and they are AMAZING


RECIPE 🎃

You need:

🧡3 1/4 cups oat, spelt, or whole wheat flour⁠

🧡1 1⁄2 tsp each: baking powder, baking soda + salt⁠

🧡2 tbsp cinnamon⁠

🧡1 tsp each: nutmeg and ground ginger⁠

🧡1 1⁄2 tbsp lemon juice⁠

🧡1 1⁄2 tsp vanilla⁠

🧡1 1⁄2 cup non-dairy milk⁠

🧡1 cup +1tbsp pumpkin purée⁠

🧡3 eggs⁠

🧡3 tbsp coconut oil, melted⁠


Optional: a sprinkle of chopped nuts (leave off if you plan to freeze + pop in the toaster).


**I did a cinnamon sugar sugar on top

🌿Mix the dry ingredients in one bowl and the wet ingredients in another. Mix them together, pour into a sheet pan lined with parchment paper, and bake at 425 for about 10 minutes. ⁠

YES! only 10 minutes
